Lisa’s Pumpkin or Yam Bread

  • 1 1/2 Cups Whole Grain Flour
  • 1/2 tsp. Sea Salt
  • 1 Cup Sugar
  • 1 tsp. Baking Soda
  • 1Cup Pumpkin or Yam Puree (cook and mix pumpkin & puree in blender or you can op to just buy the darn Puree! )
  • 1/2 Cup Canola Oil
  • 2 Eggs Beaten
  • 1/4 Cup Water
  • 1 tsp cinnamon
  • 1/4 tsp. Allspice
  • 1/4 tsp. Cloves
  • 1/4 tsp Nutmeg
  • 1/2 Cup Chopped Nuts (Optional)
Preheat oven to 350. Sift flour, salt sugar & baking soda. In separate bowl combine pumpkin or yam puree, oil, eggs, water, & spices. Pour into the bowl with dry ingredients & mix just until combined- don’t stir too much. Stir in the nuts. Pour into a well buttered 9x5x3 inch loaf pan, bake 50-60 min until done in the middle. Remove from pan, cool on a rack. Keep wrapped in refrigerator. It is extra yummy with cream cheese & chopped walnuts.
